Dog food protein: quality, digestibility, and the claims that mean nothing

Crude protein on a bag is an estimate derived from nitrogen, which is why it cannot distinguish chicken from feather meal and why the melamine scandal worked. What actually decides whether protein feeds a dog is digestibility, amino acid balance and processing, none of which appear on a label. Quick answer

The protein figure on the bag describes nitrogen, not nourishment. What matters is how much of that protein the dog can actually absorb and use.

The crude protein percentage on a bag of dog food is not a measure of meat, and it is not a measure of quality. It is an estimate derived from nitrogen content, which means any nitrogen-rich ingredient raises it, including plant protein isolates that contribute little of what a dog actually needs.

Two foods can both say twenty-eight percent protein and deliver very different amounts of usable amino acid, because they differ in digestibility, in amino acid balance, and in how much of the number came from meat rather than from pea and potato protein added to hit a marketing target.

  • Crude protein measures nitrogen, not protein quality. It cannot distinguish leather from chicken.
  • Compare foods on a dry matter or per-calorie basis, never as printed, or you are comparing water.
  • Digestibility is the number that matters most and is almost never on the label. You have to ask.
  • "Meat meal" is often a denser protein source than "fresh meat", which is mostly water.
  • Judge the outcome on your dog: body condition, muscle, coat, stool volume and consistency.

Why the percentage on the bag cannot tell you what you want to know

Crude protein is measured by burning or digesting a sample, measuring the nitrogen released, and multiplying by a conversion factor. Protein is nitrogen rich, so this works as an approximation.

It also means the test cannot tell where the nitrogen came from. Feather meal, hooves, hide and pure plant protein isolates all register. So does a non-food chemical, which is exactly what happened in 2007 when melamine was added to wheat gluten in the pet food supply chain. It raised the apparent protein content, passed the standard test, and caused kidney failure in large numbers of dogs and cats.

That episode is the clearest possible illustration of the principle: crude protein describes an analytical result, not a nutritional one.

What a dog actually needs is a set of essential amino acids in the right proportions, delivered in a form its gut can break down and absorb. Three things determine whether that happens.

Digestibility.

How much of the protein that goes in is actually absorbed rather than passed out. Highly digestible animal proteins are absorbed efficiently. Poorly processed, heat-damaged or heavily plant-based protein is not. Two foods with identical crude protein can differ substantially here, and the difference lands directly on the dog.

Amino acid profile.

Protein is only as useful as its most limiting essential amino acid. A food can be nominally high in protein while being short of methionine, lysine or tryptophan, and the dog can only build tissue up to the level of whatever runs out first. Animal proteins tend to match a dog's requirements closely. Individual plant proteins usually do not, though a well formulated blend can.

Processing.

Excessive or repeated heat damages amino acids, particularly lysine, by binding them to sugars in a way the gut cannot undo. The protein is still counted by the nitrogen test. It is no longer available to the dog.

None of these three appear on a label. That is the honest answer to why label reading alone cannot rank foods by quality, and why the questions you ask the manufacturer matter more than the panel you read.

The arithmetic that makes two bags comparable

The guaranteed analysis is printed on an as-fed basis, which means water is included. Wet food is mostly water and dry food is not, so comparing the printed numbers directly is meaningless.

Convert to dry matter.

Subtract the moisture percentage from 100 to get the dry matter percentage. Divide the crude protein figure by that dry matter figure and multiply by 100.

As a worked illustration with invented label values: a dry food showing 26 percent protein and 10 percent moisture has 90 percent dry matter, so 26 divided by 90, times 100, is about 29 percent protein on a dry matter basis. A wet food showing 9 percent protein and 78 percent moisture has 22 percent dry matter, so 9 divided by 22, times 100, is about 41 percent. The wet food, which looked far lower, is actually the higher protein food.

Better still, convert to protein per calorie.

Dogs eat to meet an energy requirement, so what a dog actually receives per day is protein relative to calories. If the bag gives metabolisable energy in kcal per kilogram, grams of protein per 1000 kcal is the fairest comparison and is the unit veterinary nutritionists work in. If the bag does not give an energy figure, ask. A manufacturer that cannot tell you the calorie content of its own food is telling you something.

Then check the adequacy statement.

Somewhere on the pack there will be a statement that the food is complete and balanced for a particular life stage, and in which regulatory framework. In North America that references AAFCO profiles. In Europe it references FEDIAF. Other regions have their own rules, and some have very little regulation at all.

Two versions of that statement exist and they are not equivalent. One says the food was formulated to meet a nutrient profile, which is a calculation. The other says the food was tested in a feeding trial, which is an actual measurement in actual dogs. A feeding trial statement is stronger evidence, particularly for digestibility, which formulation alone cannot demonstrate.

Check the life stage as well. "All life stages" means the food meets the requirements for growth and reproduction, which are the highest. That is not automatically a benefit for an adult or senior dog, because it usually means more energy and more minerals than that dog needs.

Reading the ingredient list without being fooled

Ingredients are listed in descending order by weight at the time they were added, before cooking. That single detail drives most of the misdirection.

Fresh meat first is a weaker signal than it looks.

Fresh muscle meat is roughly two thirds to three quarters water. Once the food is cooked and dried, most of that weight leaves. A "fresh chicken" first ingredient may contribute less to the finished food than the second or third item on the list.

Meat meal is not a lesser ingredient.

A named meat meal, such as chicken meal or lamb meal, has already had the water and much of the fat removed. Per unit of weight it delivers considerably more protein than fresh meat. The word sounds industrial, which is precisely why marketing avoids it, but on the arithmetic it is often the denser and more consistent protein source.

Named matters more than fresh.

"Chicken meal" tells you the species. "Meat meal" or "animal derivatives" does not, which means the composition can vary between batches depending on what was available. For a dog with a suspected food reaction, unnamed sources make an elimination trial impossible.

By-products are not waste.

In nutritional terms, liver, kidney, heart and spleen are among the most nutrient dense parts of an animal, and a wild canid eats them first. The negative connotation of the word is a marketing invention. The legitimate concern is consistency and specificity rather than the category itself.

Watch for ingredient splitting.

If peas, pea protein, pea flour, pea starch and pea fibre each appear separately, add them together mentally. Split into fragments, each ranks low. Combined, they may outweigh the meat at the top. The same trick is used with rice, maize and potato fractions.

Plant protein isolates raise the number cheaply.

Pea protein and potato protein are concentrated, inexpensive, and count fully towards crude protein. They are not automatically bad, and a well formulated diet can use them sensibly. But a food that reaches a headline protein figure largely through isolates is selling you a number rather than a nutritional advantage.

The words with no definition

Some terms on pet food packaging are regulated. Many are not, and in most markets the unregulated ones outnumber the regulated ones.

The grain-free and heart disease question, stated honestly

Since 2018 there has been an investigation, initiated in the United States, into reports of dilated cardiomyopathy in dogs of breeds not usually predisposed to it, in association with diets high in peas, lentils, other legumes or potatoes, many of them marketed as grain free.

What is reasonably established is that the reports exist, that some affected dogs improved when the diet was changed and taurine supplemented where deficiency was found, and that certain breeds including Golden Retrievers have a documented taurine-responsive form of the disease.

What is not established is a proven causal mechanism. The suspects have included taurine metabolism, the amino acid contribution of legume-heavy formulations, and something in the way these diets affect nutrient availability. The investigation has not produced a definitive answer.

The practical position that follows is not "grain free is dangerous". It is that a diet built around large quantities of legumes, from a manufacturer that cannot describe its formulation expertise or its testing, is carrying an unquantified risk for no demonstrated benefit. If your dog is on such a diet for no medical reason, that is worth a conversation with your vet. If your dog is on one because of a diagnosed problem, do not change it unilaterally.

Grains are not a common cause of food allergy in dogs. The commonest reported dietary allergens are proteins the dog has been eating for a long time, typically beef, dairy and chicken, and food allergy as a whole is a far less common cause of itching than owners and shop staff assume.

Life stage, size and workload

Protein requirements are not one number.

Puppies.

Growing dogs need more protein per calorie than adults, and they need it in the right amino acid balance. For large and giant breeds the risk that matters during growth is not protein at all. It is total energy and calcium, because growing too fast and taking in excess calcium damages developing joints in ways that cannot be undone. Use a food formulated specifically for large breed growth and do not add calcium.

Adults.

Maintenance requirements are modest, and most commercial adult foods comfortably exceed them. For a healthy adult pet dog, protein is rarely the limiting factor. Calories usually are.

Working and sporting dogs.

Sustained work raises both energy and protein needs, and the fat to protein ratio matters for endurance work. This is a genuine case for a performance formulation rather than a marketing one.

Senior dogs.

The old advice to reduce protein in older dogs was based on a misreading. Ageing dogs lose lean body mass, become less efficient at using dietary protein, and generally need at least as much good quality protein as a younger adult, not less. The exception is a dog with diagnosed kidney disease, where a therapeutic diet with controlled protein and, more importantly, controlled phosphorus is part of treatment. That is a prescription based on test results, not a precaution to apply to every grey muzzle.

Small breeds.

Higher metabolic rate per kilogram means a higher requirement per unit of body weight, but the practical constraint is usually portion accuracy. A small error in a small dog's portion is a large error proportionally.

What to judge instead of the bag

The most reliable evidence about a food is the dog eating it, assessed over weeks rather than days.

Stool deserves particular attention. If a dog produces large volumes of soft, bulky faeces on one food and smaller, firmer, less frequent ones on another, at the same intake, the second food is being digested more completely. That is a genuine quality signal that no label will give you, and it is free.

Give any diet change eight to twelve weeks before drawing conclusions about coat and condition, and transition over about a week to avoid gut upset confusing the picture.

The questions to ask a manufacturer

The global veterinary nutrition guidelines suggest asking makers a specific set of questions, and the informative part is usually whether the company can answer them at all.

  • Do you employ a qualified veterinary nutritionist or an equivalently credentialled animal nutritionist, and are they involved in formulation?
  • Who formulates your diets, and what are their qualifications?
  • Do you own and operate your manufacturing plants, or is production contracted out?
  • What quality control do you apply to ingredients and to finished product?
  • Have you run feeding trials, and to what standard?
  • Can you give me the complete nutrient analysis of this product, not just the guaranteed analysis?
  • What is the metabolisable energy per kilogram, or per can?
  • Do you measure digestibility, and what is it for this product?

A company that answers these directly, in writing, is demonstrating something meaningful. A company that responds with adjectives is also telling you something.

The failure modes of the usual advice

"Just buy the one with the highest protein."

Buys you a nitrogen figure. Says nothing about source, digestibility or balance, and in some dogs simply produces more expensive stool.

"First ingredient must be meat."

Rewards manufacturers for listing water-heavy fresh meat first, which can be the weaker formulation.

"Avoid by-products and meals."

Discards two of the more nutrient dense and protein dense ingredient categories on the basis of how the words sound.

"Grain free is healthier."

Not supported, and carries an unresolved question about legume-heavy formulations and heart disease.

"Senior dogs need low protein."

Backwards for a healthy older dog, and a route to muscle loss in exactly the animals least able to afford it.

"Switch to a novel protein because he is itchy."

Removes a protein source you may later need for a proper elimination trial, and most itchy dogs turn out to have environmental allergy or parasites rather than food allergy.

"Add a topper to make it more appealing."

Adds uncounted calories and unbalances a formulated diet. A dog that suddenly needs persuading to eat has a medical question to answer first.

What never to do

Do not build a home-prepared diet from a recipe found online without a qualified nutritionist formulating it. Published analyses of internet recipes for dogs have repeatedly found most of them incomplete, and the deficiencies that result take months to appear and are difficult to reverse.

Do not add calcium supplements to a complete food, and especially not to a large breed puppy's food.

Do not feed a therapeutic diet, or stop one, without the diagnosis it was prescribed for.

Do not change food abruptly and then judge digestibility from the first few days.

Do not use raw meaty bones or raw diets without understanding the separate handling, pathogen and fracture risks, which are their own subject.

Do not treat protein percentage as a proxy for meat content. That is the specific belief this entire industry practice depends on.

Is a higher protein food better for my dog?
Not inherently. Beyond the requirement, extra protein is used for energy or excreted, which mostly makes the food more expensive. What improves outcomes is protein the dog can digest, in a balanced amino acid profile, at a calorie level that keeps it lean. A moderate protein food with excellent digestibility outperforms a high protein food built from isolates.
How do I compare a wet food with a dry food?
Convert both to dry matter, or better, to grams of protein per 1000 kcal. Comparing the printed figures directly compares water content, which is why wet foods always look low in protein and are frequently not.
My vet suggested a prescription diet and the shop said it has poor ingredients. Who is right?
Therapeutic diets are formulated to hit specific nutrient targets, such as controlled phosphorus, restricted purines, or a hydrolysed protein that the immune system cannot recognise. Those targets sometimes require ingredients that look unimpressive on a list, because the list is not what the diet is optimising. If a diet was prescribed for a diagnosis, the diagnosis governs.
Should I worry that my dog's food contains maize or wheat?
Not on general principle. Properly processed grains are digestible for dogs and contribute usable protein and energy. Grain allergy in dogs is uncommon, and there is no evidence that grains as a category harm healthy dogs. Judge the whole formulation and the manufacturer, not one ingredient category.

When to get help

Ask your vet, rather than a shop, in these situations:

  • Any unexplained weight loss, or muscle loss over the spine, skull or hind limbs
  • A puppy of a large or giant breed, where growth rate and calcium matter more than protein
  • Any dog with diagnosed kidney, liver, heart, pancreatic or gut disease, where diet is part of treatment
  • Suspected food allergy, before you change protein sources and make a later elimination trial impossible
  • Any plan to feed a home-prepared diet long term
  • A dog that suddenly becomes fussy, because appetite change is a medical sign before it is a preference

Bring the actual packaging, or photographs of the ingredient panel, the guaranteed analysis and the adequacy statement. Bring a current weight and the weights from the last few months. Bring an honest list of everything else the dog eats, including treats, chews, training rewards and anything given by other members of the household, because that is frequently where the missing calories and the unbalancing are hiding.

If your dog has a condition where nutrition is central, ask whether a referral to a board certified veterinary nutritionist is available in your region. Many will work remotely with your own vet, and for a complex case that is a better use of money than another bag of something marketed as premium.
